Ingredients
- 60ml OGGS® Aquafaba
- 1 roll of puff pastry
- 500g of our lemon curd
- 50g caster sugar
- 1/2 tsp cream of tartar
Method
- Preheat your oven to 170°C Fan (190°C / Gas 5)
- Roll out your pastry into a tart ring, add a piece of parchment paper inside and fill with baking beans, then bake for 15 mins
- In the meantime make your lemon curd (search on our website for a great recipe!)
- After 15 mins take the tart out and empty the baking beans carefully
- Put it back in for 10-15 mins until golden all over
- Once out let it cool for a few minutes then pour your lemon curd in (it works better if your lemon curd is still warm but also good if you prepped it in advance)
- Pour the Aquafaba into a mixer and whip until soft peaks
- Add the cream of tartar then the caster sugar gradually until you have stiff peaks
- Spread or pipe on top of the tart
- Grill or blow torch the meringue
