Lemon Meringue Pie

  • 60ml OGGS® Aquafaba
  • 1 roll of puff pastry
  • 500g of our lemon curd
  • 50g caster sugar
  • 1/2 tsp cream of tartar


  1. Preheat your oven to 170°C Fan (190°C / Gas 5)

  2. Roll out your pastry into a tart ring, add a piece of parchment paper inside and fill with baking beans, then bake for 15 mins

  3. In the meantime make your lemon curd (search on our website for a great recipe!)

  4. After 15 mins take the tart out and empty the baking beans carefully

  5. Put it back in for 10-15 mins until golden all over

  6. Once out let it cool for a few minutes then pour your lemon curd in (it works better if your lemon curd is still warm but also good if you prepped it in advance)

  7. Pour the Aquafaba into a mixer and whip until soft peaks

  8. Add the cream of tartar then the caster sugar gradually until you have stiff peaks

  9. Spread or pipe on top of the tart

  10. Grill or blow torch the meringue
